Blady green tapenade
The basic ingredients of our tapenades are black or green olives, olive oil and capers. The olives and capers are finely chopped, crushed and mixed. Olive oil is added gradually until the mixture becomes a paste. Flavors and natural ingredients such as garlic, herbs, anchovies, lemon juice are added.
Tapenade is an excellent source of minerals and a food rich in unsaturated fatty acids, and in addition, it is also antioxidant. However, it is known that black olives (and therefore black colored tapenade) contain more antioxidant phenolic compounds than green olives (up to four times more). In contrast, both greens and blacks have much greater amounts of hydroxytyrosol (a phenol) than olive oil.

|Blady Tapenade||The tapenade, an olive puree very rich in minerals The tapenade is a purée of olives of Provençal origin. It is made from olives (green or black) crushed and mixed with olive oil and, depending on the recipes, with capers or anchovies, lemon juice, garlic, pine nuts, etc. Olives are known for their beneficial actions at cardiovascular and digestive levels as well as for their antioxidant properties. Nutritionnel value of the tapenade The tapenade is made up of various ingredients that can significantly vary its nutritional value. Nevertheless, we can estimate that for 100 grams of tapenade (on average 120 calories), we obtain 1 g of protein, 4 g of dietary fiber and 1.6 g of sodium. The 12.5 g of lipids present are overall monounsaturated fatty acids.|
